Polly’s Daily Bread Sourdough Pancakes are the absolutely fluffiest pancakes ever! When she was a kid, she would step outside to pick berries in the back yard at fish camp to add to the batter. She was sure to make a lot so she could have day old sourdough pancakes for lunch the next day to roll up with peanut butter.

Sourdough pancake mix creates fluffy, light pancakes with a subtle, complex tangy flavor that's often balanced by other ingredients like honey or vanilla, though some versions may be less sour. The sourdough starter makes them easier to digest, and the pancakes can have a unique, artisan flavor and a slightly crispy butter-fried edge.

Polly’s Sourdough Pancake Mix is a pre-made mix that contains organic flour and a Polly’s special sourdough starter that provides the leavening and flavor.

This mix is very easy to use, only requiring the addition of water or milk and an egg, then frying. Polly’s recipe suggests making the batter the night before to allow the sourdough starter to ferment for a more complex flavor.

The dominant flavor is often described as a mild, pleasant tang, but not overly sour. When Polly makes this recipe, she uses her homemade vanilla extract. Feel free to be creative and add other favorite flavors including honey to balance the tang.

Sourdough waffle mix is a dry mix used to create a batter for waffles that includes Polly’s sourdough starter, organic flour, organic sugar, baking soda, salt. That combined with your eggs, butter, and milk or buttermilk. Make a hearty start to your day.

Sourdough waffles offer a richer, more complex flavor profile and a superior texture compared to regular waffles.

The primary characteristic is a mild, aromatic tanginess or subtle sourness from the fermentation process that is often described as more like a yogurt tang than a sharp lemon sourness. This flavor nuance is mild and serves to balance the sweetness of typical toppings like syrup, fruit, and cream, rather than making the waffle taste distinctly "sour".

Polly’s jam has a slightly chunky consistency. It is thick enough to hold its shape somewhat but is easily spreadable.

The jam has a beautiful, deep, shiny ruby-red color that develops during the cooking process. It has a wonderful, sweet fragrance of ripe strawberries, and can only be described as comforting.

Homemade strawberry jam is incredibly versatile and can be enjoyed in many ways:

- Spread over toast, biscuits, or croissants

Sourdough Starter (Dehydrated)
Sourdough Starter (Dehydrated)

From the mother, a very active starter was dehydrated at precisely 95°F, so the yeast would be perfectly preserved for your kitchen. Complete instructions are included with a food safe bag of starter. It should take 5 days from reactivating until the beginning of your sourdough journey.

Polly has personally tested this starter and it took her three days to get to an active starter consistency.
