Wally’s Micro Bakery started with a bet. One day my daughter told me I couldn’t make real sourdough bread — the kind made the old-fashioned way with just flour, water, salt, and wild yeast. I took that challenge seriously and started learning everything I could about true sourdough baking.
One loaf turned into many, and before long the kitchen was full of bubbling starters, fermenting dough, and the smell of fresh bread.
Today Wally’s Micro Bakery bakes small-batch artisan sourdough in Las Vegas. From our classic boules to favorites like Jalapeño Cheddar, Garlic Herb, Cinnamon Raisin, Cranberry Walnut, and our extra-large sourdough cinnamon rolls, everything is handcrafted and naturally fermented for flavor.
Our slogan is “GET IT WHILE IT’S HOT” for a reason. When you place a pre-order, your bread and cinnamon rolls are baked fresh so you can pick them up right out of the oven at their best. Fresh. Small batch. Real sourdough.

Capabilities & Pricing
At Wally’s Micro Bakery, every loaf and roll is baked fresh in small batches using naturally fermented sourdough. Because of the handmade process and fresh ingredients, we operate with a few simple policies to ensure quality and fairness for everyone.
Fresh Batch Baking
All products are baked fresh for scheduled pickups. Pre-ordering is recommended to guarantee availability.
First Come, First Served
Extra items may occasionally be available for walk-up purchase, but once we sell out, we’re done for the day.
Pricing
Standard sourdough boules are $12 each or 3 for $30.
Cinnamon roll boxes are $10 per box (typically 3–4 large rolls).
Specialty & Custom Loaves
Specialty flavors and custom boules may have variable pricing depending on ingredients. At Wally’s Micro Bakery we are happy to bake your dream loaf. Share your ideas on flavor profiles and unique inclusions. We’ll bake it fresh and get it to you hot!
Mystery Sampler Boxes
Mystery boxes contain rotating flavors and experimental loaves. Contents change weekly.
Payments Accepted
Cash, Apple Pay, and other digital payments when available.
Pickup
Pickup times and locations will be provided when ordering. Please arrive during the scheduled window so your bread is still warm and fresh.
