Why is sourdough more expensive ?
Sourdough is a multi-day process. that requires time to ferment. This fermentation is key not only to its rich flavor but also to the awesome health benefits that come with true sourdough. It is more labor intensive, can only be done in small batches, requires special equipment, and a different skill level than yeasted breads. In addition to all of that, sourdough is born from a living, breathing, and very hungry starter, that requires constant attention (yes we’re talking about you, Doughlene… yes we named our starter 😂😅)
What are the health benefits of sourdough?
Sourdough offers several health benefits due to its unique fermentation process and natural ingredients:
1. Easier to Digest: The long fermentation process in sourdough breaks down gluten, making it easier to digest than regular bread, especially for people with mild gluten sensitivities.
2. Lower Glycemic Index: Sourdough has a lower glycemic index than other breads, meaning it causes a slower rise in blood sugar levels, which is beneficial for managing blood sugar spikes.
3. Rich in Probiotics: The fermentation process can produce beneficial bacteria, or probiotics, which support gut health, though most of these bacteria are killed during baking. However, the prebiotics (fiber that feeds good bacteria) remain, contributing to a healthy gut.
4. Nutrient Absorption: The natural acids in sourdough help break down phytic acid, an anti-nutrient that can block the absorption of minerals like magnesium, iron, and zinc. As a result, your body can absorb these minerals more effectively from sourdough.
5. Fewer Preservatives: Sourdough’s natural acidity helps it stay fresh longer without the need for added preservatives, making it a cleaner option.
6. Potential for Reduced Bloating: For some, sourdough is easier on the digestive system and can reduce bloating, thanks to the longer fermentation process that partially breaks down carbohydrates.
These factors contribute to sourdough’s reputation as a healthier, more nutrient-dense bread option.
