It is not. If you are celiac or gluten intolerant I would not recommend you eat this. But if you just have a gluten sensitivity, you may try a small amount and see how you go with it. During the fermentation process, some of the gluten is broken down, making it easier to digest. Many people who have gluten sensitivities can eat my product as my loaves are fermented for 30-36 hours.
