A traditional German Easter meal, “Kassler” is cured and smoked pork loin similar in flavor to ham. Each thick slice is individually wrapped and baked in puff pastry, then served alongside two potato dumplings, organic peas and carrots, red cabbage, then smothered in scratch-made pork pan gravy.
