All of my breads are naturally leavened with an active sourdough starter and slow-fermented for flavor and digestibility. Many loaves also feature organic, fresh-milled flour for extra nutrition and depth of flavor.
What is Fresh-Milled Flour and what are the benefits?
Fresh-milled flour is made by grinding whole organic wheat berries just before baking, keeping the flour at its freshest and most nutrient-rich state. Because it hasn’t been sitting on shelves, it retains more natural vitamins, minerals, healthy oils, and its full protein content. The result is a more wholesome, flavorful loaf with a hearty texture and naturally higher protein compared to many refined flours.

Are your ingredients organic?
I use organic flour and high-quality, simple ingredients whenever possible. No preservatives or commercial yeast are added to my sourdough loaves.
