Sourdough is bread made through a traditional fermentation process using a natural starter, which is an established culture of wild yeast and beneficial bacteria from flour and water. Unlike conventional bread that relies on commercial yeast, sourdough rises through this natural culture. Developing and maintaining a strong starter takes time, a close eye, and a good understanding of fermentation to grow it strong enough to bake quality loaves.
The dough is typically fermented slowly over the course of one to two days. This long fermentation develops its nutritional value and allows the natural microbes to begin breaking down some of the gluten and phytic acid found in the grain.
Because of the long fermentation, many people find traditional sourdough easier to digest. However, it is still made with wheat and is not gluten-free.
What ingredients do you use?
My loaves are made with Canadian flour, filtered water, sea salt, and a natural sourdough starter. Some specialty loaves may include additional wholesome ingredients. I try to do my best to use local and Canadian products! My focus is on simple food that supports your health, which means no unnecessary additives or preservatives.
Is your bread organic?
Short answer: yes. I source high-quality flour from trusted Canadian mills and local farmers who *do not* spray glyphosate or use additives or chemicals in their wheat or processing. Some flour is certified organic, while other flour is naturally grown but not formally certified. I choose ingredients based on quality and responsible farming practices!
Why is sourdough more expensive than store-bought bread?
Traditional sourdough takes a lot of time and understanding to bake. A single loaf on average takes up to 3 days to make due to its natural fermentation process! Each loaf is mixed, fermented, shaped, and baked by hand. Small-batch baking, quality flour, and slow fermentation all contribute to the final cost! I value quality ingredients and optimal nutrition over the price of convenience.
