Every item at Edie’s Oven is a little different. The bread changes with the weather. I can’t promise you consistency.
What I can promise is honesty, care, and ingredients I’d stake my name on.
That promise I keep. Every time.
Some things pass through hands without words.
My grandmother Apolonia grew up in early 20th century Poland, in a family that knew how to feed people — really feed them. Her kitchen was simple, but nothing that came out of it was. Lazy dumplings with toasted breadcrumbs. Sweet homemade bread for the whole family. Bread with butter and jam that you didn’t throw away — ever — because you understood what it cost.
She survived a war. She knew what hunger felt like. And she taught me, without ever teaching me, that food is an act of respect. For the ingredients. For the people eating. For the hands that came before yours.
I bake in Seabrook, Texas, using freshly milled organic flour — milled in-house or sourced from trusted mills — and natural fermentation with no shortcuts. Every loaf is slow-fermented for 36 to 48 hours. Every pastry is shaped and decorated by hand, one at a time. Every cookie has been in my hands before it reaches yours.
One rule I’ve never broken: I won’t give anyone food I wouldn’t eat myself.
That one came from Apolonia. She never broke it either.

Edie’s Oven specializes in small-batch, naturally leavened baked goods made with freshly milled organic flour and time-honored fermentation methods.
Every item on the menu is baked to order — in limited quantities, with long fermentation times and hands-on preparation from start to finish. This is not fast baking. It’s the kind that takes two days and tastes like it.

I believe exceptional baking begins with thoughtful choices. Every ingredient and every detail matters to me. * I use organic ingredients whenever possible. * I mill part of my flour fresh and carefully select the rest from trusted mills that share my commitment to quality and traditional milling. * I never use bromated or bleached flour. * I rely on slow fermentation to develop flavor and texture naturally. * I use natural colors from fruits, vegetables, and other plant-based ingredients whenever possible. * I bake many of my cakes and cookies using traditional methods, allowing eggs and carefully selected flour to do the work instead of unnecessary leavening agents whenever possible. * I pay attention to every detail—from unbleached, BPA-free parchment paper to high-quality bakeware and thoughtfully chosen packaging. * Everything I make is handcrafted from scratch in Texas, in small batches. My Promise I believe that exceptional baking begins long before the dough is mixed. From the grain I choose to the materials I bake and package with, every decision reflects my commitment to quality, craftsmanship, and care.
To ensure availability, please place your order by Wednesday, before the end of the day, for Saturday pickup or delivery. Custom cakes require advance notice to allow time for planning, preparation, and decorating. Missed the deadline? Don’t hesitate to reach out!
