This is a very BIG GF, DF and egg free DELICIOUS oatmeal sandwich cookie! It has just the right chewy-ness and cinnamon spice and it is sweetened with coconut sugar. The generous cookies are filled with a vanilla frosting that is made with cane sugar but is not too sweet. So good!
