Why Fermented Sourdough Cookies Feel Better
Our cookies are made using a traditional sourdough fermentation process. Fermentation happens before baking and allows natural cultures to slowly and gently break down sugars and starches. This process transforms the dough in ways that many people can feel when they eat the finished cookie.
During fermentation, complex carbohydrates are partially pre-digested and natural acids are created. This can make the cookies feel lighter, smoother, and easier on the stomach compared to cookies made without fermentation. Fermentation also deepens flavor and softens sweetness, creating a more balanced eating experience.
WHAT ARE POSTBIOTICS? Postbiotics are the beneficial compounds produced by natural cultures during fermentation. Although the live cultures do not survive baking, the compounds they create remain in the finished cookie. These postbiotics are part of what makes fermented foods feel different from non-fermented foods.
WHY POSTBIOTICS MATTER. Postbiotics contribute to smoother digestion, improved mineral absorption, and a more comfortable feeling after eating. Our bread bowls begin with slow, natural
sourdough fermentation, a time-honored process that develops deeper flavor, refined texture, and a more satisfying experience. Using the same foundational dough, we present three distinct regional expressions.
Italian Style - Pure and traditional, inspired by old Italian kitchens. Balanced and gentle in tang, with a crisp golden crust and soft, airy interior.
Paris Style - Light and refined, with longer fermentation creating a delicate open crumb, thin crackly crust, and smooth, subtle flavor.
San Francisco Style — Bold and iconic, known for its pronounced sourness, hearty chew, and rustic crust that holds beautifully to rich soups and stews.

Weekly Add-On Cookie - Ask what it is this week. It will always be either our fermented thumbprint cookie or fermented sourdough sugar cookie. Limited, seasonal, and always delicious.

Our sourdough bread bowls are naturally fermented and made with NO commercial yeast or conditioners.
Day 0–1 (Bake Day + Next Day)
At their peak — soft, chewy inside with a beautifully crisp crust. Perfect for soups, chowders, and enjoying fresh.
Day 2–3
Still excellent for bread bowls. The crumb remains chewy and flavorful, and the crust may soften slightly (this is normal with real sourdough, especially near the ocean). Ideal for serving warm with soups.
Day 4
Best enjoyed warmed. The bread is still very good and flavorful, with a slightly firmer crumb. A quick oven warm brings it right back and makes it great for hearty bread bowls or garlic-style bowls.
Day 5 and Beyond
The bread is still good if mold-free, but no longer at its softest. At this stage, we recommend using it warmed or toasted — wonderful for garlic bread bowls, croutons, or dipping bread.
Storage Tip
Store at room temperature, loosely wrapped in parchment or a cloth. Never refrigerate.
To refresh, warm in a 375°F oven for 5–8 minutes.
