The royal icing acts as a sealant, preserving the freshness and flavor of the cookie underneath. For optimal taste and texture, enjoy cookies within the first week. Do not store cookies in the refrigerator! Cookies can be frozen for up to 3 months. When you remove them from the freezer, let them thaw in their heat sealed bag for 2 hours.
