These cookies are made with browned butter to bring out the complex caramel and vanilla flavors that naturally exist in toasted butter. The cookie dough is mixed 24 hours in advance to allow the flavor of the browned butter to infuse into the flour and sugars before baking. Then, the bread is fermented for 24 hours, further reducing any gluten content. This means that the bread is safe for celiacs and people who are sensitive to gluten but not safe for those who have a wheat allergy.
