More facts copied from google:
Sourdough bread is considered healthier than many other breads because the fermentation process breaks down complex carbohydrates, making it more digestible, potentially reducing blood sugar spikes, and may even increase the availability of certain nutrients like folate, potassium, and magnesium due to the interaction with lactic acid bacteria during fermentation; additionally, sourdough can be lower in FODMAPs, which can benefit people with digestive sensitivities.
Key points about sourdough's health benefits:
Improved digestibility:
The long fermentation time allows the bacteria to break down gluten and other components in the flour, making it easier to digest for some people, particularly those with gluten sensitivities.
Nutrient availability:
The fermentation process can increase the bioavailability of certain minerals like zinc, iron, and magnesium, meaning your body can absorb them more readily.
Lower glycemic index:
Sourdough may have a lower glycemic index compared to white bread, meaning it causes a slower rise in blood sugar levels.
Potential gut health benefits:
The beneficial bacteria produced during fermentation may positively impact gut health by promoting a healthy microbiome.
