This cake is an 8-inch two layer cake. The filling is a homemade coconut frosting that also has toasted pecans. The entire cake is frosted in chocolate, and coconut frosting is generously placed on top. The top and bottom sides are piped with a shell tip.
I make the most delicious, moist, flavorful carrot cake around, hands down! It incorporates carrots (duh), coconut, toasted pecans, and pineapple. Raisins by request!
