Doughlisa starter is naturally fermented. It’s a total of three days to the perfect loaf.
Our sourdough is handcrafted combining unbleached hard red wheat flour, spring water, honey, and sea salt.
That’s how Doughlisa makes a GOOD loaf of artisan sourdough bread.
Why is TRUE sourdough better?
TRUE sourdough bread is best because it is easier to digest and has a lower glycemic index. It can be better for gluten sensitivity and has better good acid. It provides healthy bacteria for better gut health and less yeast. Sourdough is made using fermented, wild yeast and bacteria (natural origins) instead of commercial yeast. That’s where Doughlisa steals the spotlight.
TRUE sourdough is a good selection, compared to other bread, because it maintains many of the original nutrients that can be processed out of most other kinds of bread.

What is DOUGHLISA?
Doughlisa migrated to Colorado sometime in the 1920s from Italy. She spent a few years in Kansas prior to relocating to Florida in 2025. 
Doughlisa starter is a live culture containing a stable blend of wild yeast and suitable lactic acid bacteria. She has been meticulously maintained indefinitely by constantly being fed with unbleached, never brominated, whole red wheat, flour, and bottled spring water. Being fed daily she begins to bubble and grow. That’s where we see that Doughlisa is alive and active. The bubbles are the chains of yeast eating the sugars and starch in the flour. 
She is used to seed the fermentation process in every baked product we serve. Doughlisa’s primary responsibility is to leaven (make rise) and flavor all of our baked goods.
