Artisan Sourdough Bread by Layla is a registered micro bakery business that complies with the DuPage Health Department rules and regulations, as well as CFPM standards.

Each product is handcrafted with care using our signature blend of organic flours from locally sourced Janie’s Mill in Ashkum, IL, and King Arthur Flour Company, wild leaven, water, and Himalayan salt. This is authentic, slow-fermented sourdough—bread made the way it’s meant to be. With its perfectly crispy crust and chewy, flavorful interior, it’s ideal for everything from toast and sandwiches to croutons, French toast, paninis, and more.

Sourdough is also known for being easier to digest than most breads, thanks to the slow fermentation process that allows the gluten to be partially “digested.” The result? A bread that’s gentle on your stomach while packing a full, rich flavor.

Creating this bread takes three full days—from preparing the leaven to dough fermentation, shaping, and overnight cold fermentation before it finally bakes to perfection on Bake Day. Every loaf is crafted with patience and precision, ensuring you get the highest quality and flavor.

Our sourdough cinnamon rolls and cookies are naturally leavened—made without additives or commercial yeast—using only premium organic ingredients and farm-fresh eggs from Elysian Fields in Savanna, IL.

A little about me: I was born and raised in Eastern Europe, where I learned the craft of baking from my grandmother. Bread was always a staple in our home, and I grew up never having digestive issues with it. It wasn’t until I moved to the United States that I realized the bread here was different—the fast-paced processes and added ingredients were what made me sick, not the bread itself. That discovery led me back to my roots and inspired me to begin baking my own sourdough, just like my grandmother did—naturally, patiently, and with real ingredients.
