Because it's good.
There are quite a few reasons people choose sourdough over other breads—some practical, some health-related, and some just for the joy of it:
1. Easier to Digest
The long fermentation process breaks down some of the gluten and starches, which can make sourdough gentler on the digestive system than conventional bread.
Phytic acid (which binds minerals and makes them harder to absorb) is reduced, so your body can access more nutrients.
2. Better Nutrient Absorption
The fermentation frees up minerals like iron, zinc, and magnesium, making them more bioavailable.
3. Lower Glycemic Impact
Sourdough tends to spike blood sugar less than regular bread, thanks to the organic acids created during fermentation.
4. Natural Preservative Effect
The acids and wild yeasts act as natural preservatives, so sourdough often stays fresh longer without additives.
5. Richer Flavor & Texture
The tangy, complex flavor comes from lactic acid bacteria, and the chewy, airy texture makes it stand out compared to store-bought sandwich bread.
6. Gut-Friendly Compounds
While the probiotics don’t survive baking, the prebiotics (fibers that feed good gut bacteria) remain. This can help support a healthier gut environment.
7. Fewer Additives
True sourdough is just flour, water, and salt—no commercial yeast, conditioners, or preservatives.
8. Connection to Tradition
Making sourdough is a slower, mindful process that connects you with food traditions spanning thousands of years.

Three day lead time
The Three-Day Sourdough Process
Every loaf is slow-made with purpose and patience — no shortcuts, just time, care, and love.
Day 1 – Feeding the Starter
It all begins with the starter — a living culture that needs to be fed and strengthened. On the first day, I grow enough for each batch so it’s full of life and ready to rise.
Day 2 – Mixing & Resting
Once the starter is strong, I mix the dough and let it rise slowly through the day. Then it rests overnight in the refrigerator, where the magic happens — flavor deepens, texture improves, and the sourdough’s character comes to life.
Day 3 – Baking & Packing
The dough finishes its chill, then it’s shaped, scored, baked, cooled, and bagged — all by hand and with a grateful heart.
Because this process takes three full days, preorders close each Wednesday evening for Saturday pickup. It’s the only way to make sure each loaf gets the attention it deserves — fresh, flavorful, and full of that homemade goodness you can taste.
