Sio Pan (시오빵, 소금빵) is a soft, salted butter milk bread with a melt-in-your-mouth richness. The name “sio” comes from the Japanese word for salt, and this bread takes that idea to the next level with a generous layer of salted butter tucked inside. As it bakes, the butter seeps into the dough, creating an unbelievably tender crumb and a deep, savory-buttery aroma.

One of its signatures is the bottom crust—almost “pan-fried” in butter—giving each loaf a golden, crisp edge that contrasts beautifully with the fluffy, cloud-soft interior. Every bite is buttery, warm, and comforting without being overly sweet.

At my bakery, I make Sio Pan with slow fermentation and high-quality salted butter so you get that rich, buttery flavor from the very first bite to the last.
