These Italian cookies are very special to me because my mother and I would make them together when I was a child. It was a favorite amongst all the other baking we did during the holidays!

We haven’t been able to bake together in a very long time. She now has Alzheimer’s disease. She no longer remembers making these 😞 but I will always have a fond memory of making dozens upon dozens with her ❤️

Pizzelles are crispy and thin, but not paper wafer thin. And they are addictive! 🤤
