Whole Hog for Swine Fest! Tiffany Wilhite
When I reached out to Rene and Andrea at Sandoval Craft Barbecue about our idea for a whole hog, they never hesitated! Whole hogs aren’t very common down here, and it actually turned out to be somewhat difficult to source one, but they went above and beyond to make it happen. They did all the research, even ran a test pig beforehand, and absolutely executed it beyond our expectations.
Not only was the hog incredible. Perfectly smoky, flavorful, and cooked beautifully but the presentation was equally gorgeous. Every detail was thoughtfully done.
And the sides? Just as impressive. The mac & cheese, potato salad, and charro beans were fantastic. They even make their own pickles, pickled onions, and jalapeños, which really showed the care they put into every element of the meal.
You can tell they truly care about their craft. I 100% recommend them for any type of catering, and we will use them every opportunity we possibly can!
