To rehydrate sourdough starter, mix a small amount of dehydrated flakes (around 5g) with warm water (around 20-25g) and let it soften for an hour, then stir in flour (around 15-20g) to create a thick paste, and feed it daily (equal parts flour/water) in a warm spot until it's bubbly and consistently doubles in size, which usually takes 3-5 days.

I personally like to feed twice a day for a couple days (making recipes with my discard) prior to baking 😋

Can be consumed in recipes in a 2-3 days of feedings.
