No I do not. While potato starter certainly makes wonderful products, it is not true sourdough and lacks the flavor and gut benefits of true, fully fermented sourdough starter.
“Is sourdough gluten free?”
The short answer: no it’s not gluten free.
The longer answer: fully fermenting the dough allows the gluten compounds to begin breaking down, making it easier to digest. Many people who are SENSITIVE to gluten find they can tolerate sourdough (if you have celiacs this is absolutely not for you). As always, do your own research and eat at your own risk if you have sensitivities.
