Rehydration Instructions for Air-Dried Patuneya Sourdough Starter

1. Prepare: Use clean, filtered water at room temperature (around 78-80°F / 25.5-27°C) for best results.

2. Measure: In a clean jar, combine **20g of dried sourdough starter** with **30g of water.

3. Stir: Mix vigorously until the dried starter is fully hydrated and forms a smooth paste.

4. Wait:Let sit in a warm place, stirring occasionally, until the mixture is fully absorbed (this may take 4-8 hours).

5. First Feeding: Add **10g of flour** and **10g of water** to the starter without discarding any of the original mix.

6. Monitor: Over the next 24-48 hours, watch for bubbles forming—this indicates the yeast is reactivating.

7. Continue Feeding: Once bubbles appear, feed the starter with **20g of flour** and **20g of water**, mix.

8. Peak Activity: By Day 4 , the starter should be thickening and rising after feedings. When it peaks and begins to fall, discard all but **30g of starter** and feed with **30g flour** and **30g water**

9. Ready to Use: Continue daily feedings until the starter consistently doubles in size within **4-6 hours** after feeding.

For best results, store in a cool, dry place and maintain regular feedings to keep your starter active and healthy.

How to Grow Your Own Sourdough Starter from Our 2 oz of Live Starter

Your 2 oz live sourdough starter is packed with wild yeast and beneficial bacteria—ready to grow into a strong, active culture for baking! Follow these steps to build and maintain your own sourdough starter.

Day 1: First Feeding

1. Prepare a Clean Jar: Use a glass or plastic container with a loose-fitting lid or breathable cover.

2. Add Flour & Water: Mix your **2 oz starter** with **2 oz (¼ cup) of unbleached all-purpose or bread flour** and **2 oz (¼ cup) of filtered water**. Stir until smooth.

3. Let It Rest:Cover loosely and place in a warm spot (70-75°F / 21-24°C).

Days 2-5: Daily Feedings

1. Discard & Feed: Each day, discard **half** of the starter and add **equal parts flour and water** (by weight). Example: If you have **4 oz of starter**, feed with **4 oz flour** and **4 oz water**.

2. Mix & Monitor: Stir well and let it sit at room temperature. Look for bubbles and a tangy aroma—signs of healthy fermentation!

3. Adjust as Needed: If your starter seems sluggish, feed twice a day for extra strength.

Day 6+: Ready to Bake!

- Your starter should double in size within 4-6 hours after feeding.

- Perform a **float test**: Drop a spoonful into water—if it floats, it’s ready to bake!

- Continue feeding daily or store in the fridge for weekly maintenance.

Long-Term Care:

- Room Temperature: Feed daily if baking often.

- Refrigerated Starter: Feed once a week to keep it active.

- Reviving a Cold Starter: If stored in the fridge, give it 2-3 feedings at room temperature before baking.
