Honeybird Sourdough is a small-batch micro bakery specializing in traditional, long-fermented sourdough. Our dough is given plenty of time to develop flavor and texture naturally—because good bread shouldn't be rushed.
What does “long-fermented” mean?
Our sourdough is fermented for an extended period of time, often 24 hours or more. This slow process allows the dough to develop a deeper flavor, beautiful texture, and the characteristics people love about traditional sourdough.
What ingredients do you use?
We keep our recipes simple and use natural ingredients. Our sourdough is made with flour, water, salt, and our active sourdough starter, with additional ingredients depending on the flavor or baked item.
Do you use commercial yeast?
No. Our sourdough breads are naturally leavened with our sourdough starter rather than commercial yeast.
Why does sourdough take so long?
Because we're not interested in rushing it! Long fermentation is part of what gives sourdough its distinctive flavor, texture, and character.
Is everything made from scratch?
Yes! Honeybird is a small-batch bakery, and your bread and baked goods are made by hand in small quantities.
When can I order?
Honeybird releases a new menu each week. Orders are generally due Sunday for Thursday pickup.

Where do I pick up my order?
Orders are available for pickup at our designated Honeybird Sourdough pickup locations in the Canyon Lake area. Your pickup location will be selected when you place your order.
Do you deliver?
At this time, Honeybird Sourdough is a pickup-based micro bakery rather than a delivery service.
What if I miss the weekly order deadline?
Once ordering closes, we begin preparing the dough and planning our bake. If you've missed the deadline, you're always welcome to reach out and ask—but we can't guarantee that additional orders can be accommodated.
Can I freeze Honeybird bread?
Absolutely! Sourdough freezes beautifully. For best results, wrap your bread well and freeze it as soon as possible. Thaw at room temperature and refresh in the oven for that just-baked texture.
How should I store my sourdough?
For the best texture, store your bread at room temperature in a bread bag, paper bag, or other breathable container. Avoid storing it in the refrigerator, which can cause bread to stale more quickly.
Do you offer gluten-free sourdough?
At this time, Honeybird Sourdough is not a gluten-free bakery, and our products are made in a kitchen where wheat and gluten are present.
That being said, long-fermented sourdough is usually surprisingly well tolerated by some with gluten sensitivity (not celiac).
Do you offer dairy-free options?
Some Honeybird products are naturally dairy-free, while others contain butter, cheese, or other dairy ingredients. Always check the individual menu description or ask before ordering.
What about food allergies?
Honeybird is a small home-based bakery and ingredients containing common allergens may be used in the kitchen. If you have a serious food allergy, please reach out before ordering so we can discuss whether a product is appropriate for you.

Honeybird is a little piece of me—warm, handmade, welcoming, and inspired by the beauty of the Texas Hill Country. And, of course, there's our hummingbird mascot!
Why does your tagline say “Bread that loves you back”?
Because we believe good bread should be made with care. Honeybird isn't about mass-produced loaves or rushing through a recipe. It's about taking the time to make something delicious for your family.
Unlike commercial baked goods, long-fermented sourdough using natural ingredients is gut friendly, does not spike blood sugar or cause bloating.
