Instead, it’s made with a starter—a simple mixture of flour and water that’s been fermented to cultivate wild yeast and beneficial bacteria. This natural process is what gives sourdough its distinct tangy flavor and slightly chewy texture. Wild yeast offers more complex flavor than commercial yeast, and because it’s free from additives, it’s a more natural choice.
