Sourdough bread is made with an active, naturally occurring, wild yeast. It is naturally fermented and has a lower glycemic index than commercial yeast breads. Sourdough also acts as a probiotic, helping promote good gut health.
Doughlene
Every great sourdough starter has a great name. Since they’re actual living things, and she certainly proves greatness, I spent a good bit of time coming up with her’s. Doughlene came to me one day while I was mixing up a lot of our original bread. The girls had just started receiving books through the imagination library from Dolly Parton, so her songs were running through my brain. As I was mixing and singing, I changed Jolene to Doughlene and so she was named!
