Why does it take a few days to make Sourdough bread?
Sourdough takes time... this is because it relies on a slow, wild-yeast (starter) fermentation process instead of commercial "instant" yeast.
There are key steps and procedures that add to the multiple days needed.
* Starter maintenance
* Slower leavening
* Bulk fermentation (the long period)
* Proofing (final rise)- usually 12 hours minimum.
* Dough development
* Special and Custom Techniques

What makes Sourdough so special?
Store bread is just bad for you! Traditional and homemade sourdough bread is easier to digest, has a lower glycemic index, and has a richer nutrient profile compared to store bought and conventional breads. The longer fermentation process also breaks down gluten and phytic acid, making it easier on your digestive system and helps to manage blood sugar levels. Sourdough also contains prebiotics and beneficial bacteria that support gut health, along with vitamins and minerals like iron and B vitamins. We also use pink Himalayan salt which adds additional minerals to our bread. Lastly, sourdough has a unique flavor, fewer preservatives, and our version is made with simple but quality ingredients.
What quality ingredients do you use?
We use organic flours which ferment better, taste richer, and keeps our sourdough starter, "Betty Breadette", super happy. Our bread and goodies are all made with Kerry grass fed butter, cage free eggs, high-quality sea salt or pink Himalayan salt which gives depth, minerals, and a nice rise to our products. Water is important to us - we use spring water and/or filtered water. There is no chlorine or tap minerals dulling our flavor and no worries of poor water quality.
