In this class, we’ll walk through sourdough bagels and sourdough cinnamon rolls from a foundational place. The techniques shift a bit, but the dough itself is often more forgiving than traditional bread dough.

• Fermentation timelines that make sense
• What makes a bagel chewy (and why the boil matters)
