What is a cottage bakery?
According to the Placer County Cottage Food Law, the State of California allows individuals to operate a food business from their primary residence under certain circumstances. Among others, those circumstances include what, how and where a cottage food business can produce and sell. As a cottage bakery, we have to abide by those standards in order legally operate.
How long does sourdough bread stay fresh?
Our bread does not contain any preservatives, additives or fillers and is made with as many organic and high quality ingredients as possible so it unfortunately will not last as long as store bought commercially produced bread unless frozen.
Usually about 3-4 days at room temperature is the maximum it will be good for. You can definitely extend its shelf life to several months by freezing slices (or whole loaves) and toasted when ready to consume. Sourdough bread comes back to life beautifully when toasted. After you bring your bread home, you can keep your bread in an air tight container or ziplock bag at room temperature for up to up 3 days. Slice your bread and keep it in the freezer after the first 2-3 days and toast the slices as you are ready to consume them. Toasting the slices will bring out that amazing flavor you have come to love back to life!
What’s the difference between sourdough & store-bought bread made with commercial yeast?
Fresh sourdough bread is different than store-bought bread in many ways. Sourdough is made with a different kind of yeast called wild yeast. In comparison to commercial yeast, wild yeast is richer in nutrients, promotes good gut health, is easier to digest, contains lower amounts of gluten, and allows your bread to have a lower glycemic index. Not only will your fresh sourdough bread taste great, but it will also be great for your health.
How should I store sourdough bread to keep them fresh?
Since we do not use any preservatives in our bread, your sourdough will be fresh for around five days. The exact date will depend on the conditions in which you are storing your bread, temperature of your home, etc. Be cautious of consuming after day five.
Cool, Dry Place:
Sourdough bread, like other baked goods, thrives in a cool, dry environment, away from excessive heat, moisture, and air.
Bread Box:
A bread box is a great option for storing sourdough, as it allows for good air circulation while keeping the bread protected.
Paper Bag:
Brown paper bags are a good choice for short-term storage, as they allow the bread to breathe and prevent it from becoming soggy.
Linen Bag:
Linen bags are another excellent option, as they are breathable and durable, helping to maintain the bread's moisture levels.
Paper bags, kitchen towels, and plastic bags
Plastic zip lock bag also work very well to keep the bread from drying excessively. And while many sources say never to use a plastic bag, sometimes it might be necessary, especially if your climate demands it.
Freezing:
For long-term storage, you can freeze sourdough bread, wrapping it tightly in plastic wrap and placing it in a freezer-safe bag.
Cutting:
If you've sliced the bread, store it cut-side down to help maintain moisture and prevent the crust from drying out.
Avoid the Fridge:
Refrigerating sourdough bread can cause it to become hard and stale quickly, so it's best to avoid it unless you're planning to freeze the bread.
How to revive the frozen sourdough bread?
Here are the steps to defrost frozen sourdough in the oven:
1. **Preheat the oven**: Set your oven to 350°F (175°C) and allow it to fully preheat.
2. **Remove from packaging**: Take the sourdough out of the freezer and remove any plastic wrap or packaging.
3. **Place the bread in the oven**: Place the frozen loaf directly on the oven rack or on a baking sheet.
4. **Bake for 20-30 minutes**: Heat the bread for about 20-30 minutes, depending on the size of the loaf. The bread should be warm and have a slightly crispy crust when done.
5. **Check for doneness**: After 20 minutes, check the loaf to see if it has defrosted and is heated through. If not, continue baking for another 10 minutes.
6. **Optional – Crisp the crust**: If you want a crispier crust, you can turn the oven up to 400°F (200°C) for the last 5 minutes of baking.
7. **Let it cool slightly**: Once done, remove the bread from the oven and allow it to cool for a few minutes before slicing.
This method ensures your sourdough defrosts while maintaining its texture and flavor.
